Las Vegas-based Virgin Cheese is filling the city’s vegan cheese void by providing organic cashew-based delectables that range from semi-soft to slicing varieties. Jodi Paige, the company’s self-described Chief Cheese Officer (CCO), began this artisanal enterprise in 2014, debuting her lemon dill and shallot truffle at a Vegas fundraiser. Since then, Virgin Cheese has added classics like pepper jack, sharp white cheddar and smoked gouda to its growing menu.
