Ingredients Needed:
- 4 red bell peppers
- 2 tablespoons olive oil
- 5 cloves garlic peeled
- 1 large shallot chopped
- 1/4 cup cashews
- basil leaves handful
- 1-pound pasta
- 1/2 cup vegetable broth
- 2 tablespoons lemon juice
Instructions:
- Preheat the oven to 220 ° C. Cut the red pepper in half lengthwise and remove the stems, seeds. Place the cut side down on a baking sheet and brush with olive oil. Bake in the preheated oven for 25 minutes. Put whole garlic cloves, chopped shallots and cashews on the baking sheet. Bake for another 10 minutes.
