We’re beyond grateful to Pasta-based for this delightful recipe. Creamy vegan pasta sauce made with grilled red peppers is an excellent alternative to tomato-based sauces. This is a simple and easy recipe, perfect for any type of pasta.

Ingredients Needed:

  • 4 red bell peppers
  • 2 tablespoons olive oil
  • 5 cloves garlic peeled
  • 1 large shallot chopped
  • 1/4 cup cashews
  • basil leaves handful
  • 1-pound pasta
  • 1/2 cup vegetable broth
  • 2 tablespoons lemon juice

Instructions:

  1. Preheat the oven to 220 ° C. Cut the red pepper in half lengthwise and remove the stems, seeds. Place the cut side down on a baking sheet and brush with olive oil. Bake in the preheated oven for 25 minutes. Put whole garlic cloves, chopped shallots and cashews on the baking sheet. Bake for another 10 minutes.
  2. When the red peppers are roasted, take the baking sheet out of the oven and put aside for cool After cooling, remove the skins and discard them.
  3. Add the roasted peppers, garlic cloves, shallots, cashews, basil leaves, vegetable broth and lemon juice to a blender. Mix until everything is well mixed and creamy.
  4. Enjoy your creamy vegan pasta sauce with grilled red peppers!
