In particular, this recipe for the best ever vegan mac ‘n cheese will satisfy any appetite. You can never go wrong with this simple nutritious meal, which has the added benefits of being inexpensive, and quick to make. Here is a fantastic recipe for you to try out next time you are whipping up vegan mac ‘n cheese.

INGREDIENTS NEEDED:

  • 1 packet of small pasta salt
  • 1 onion
  • Cauliflower
  • Pumpkin
  • Carrots
  • 3 potatoes
  • 100g dairy-free butter or vegan butter
  • Olive oil
  • 1 cup of flour
  • 1 lime

PREPARATION TIME: 25-30 minutes

  1. Heat a large saucepan of water, add a shake of salt. When the water is warm, put the small pasta into the water and bring to the boil. Switch off the stovetop when the pasta is soft and cooked.
  2. Place cashews in a jug and add water. Soak the cashews.
  3. Cut up three potatoes. Repeat with carrots, cauliflower, onion, and pumpkin. Place all cut vegetables in a large saucepan with water. Bring to the boil until the vegetables are al dente.
  4. Place the vegan butter in a saucepan. On a low heat setting, melt the butter. Add the flour and stir until a paste is formed.
  5. Drain and rinse the soaked cashews.
  6. After the vegetables have cooled, place them in a blender. Add the cashew nuts. Add salt, two tablespoons of olive oil, and a squeeze of lime juice. Blend until smooth. Add the butter and the flour mixture to the blender, and blend for 1-2 minutes.
  7. Take the pasta and drain. Place into a large bowl.
  8. Take the contents from the blender and pour it into the bowl with pasta. Stir well.
