A big thank you to Loving It Vegan for this wonderful light, fluffy and delicious vegan vanilla cake recipe. Two vanilla sponges covered with velvety vegan vanilla frosting and fresh strawberries is ideal for special occasions (even if “special occasion” simply means you made it to Friday).

Ingredients Needed:

  • 2 cups All-Purpose Flour
  • 1 cup White Sugar
  • 1 tsp Baking Soda
  • 1/2 tsp Salt
  • 1 cup Soy Milk
  • 2 tsp Vanilla Extract
  • 1/3 cup Extra Virgin Olive Oil
  • 1 Tbsp. White Vinegar
  • Fresh Strawberries

For The Vanilla Frosting:

  • 3 cups Powdered Sugar
  • 3 Tbsp. Vegan Butter
  • 4 Tbsp. Soy Milk
  • 2 tsp Vanilla Extract

Instructions:

  1. Preheat oven to 350F.
  2. Whisk the flour in a bowl.
  3. Add the sugar, baking powder and salt and mix.
  4. Add the soy milk, vanilla, oil and white vinegar and quickly shake them with a hand mixer until they mix.
  5. Grease two 7-inch round cake pans with Extra Virgin Olive oil and cut the parchment paper into circles on the floor.
  6. Spread the dough evenly over them.
  7. Bake for 30 minutes.
  8. Remove from the oven and insert in the center of the cake with a toothpick. If it comes out clean, your cake is ready.
  9. Place in a rack to cool completely.

For Vanilla Frosting

  1. Add the powdered sugar, vegan butter, vanilla and half the soy milk.
  2. Mix at low speed with an electric mixer and slowly increase the speed When your cake is completely cold, add frosting to one of the layers.
  3. Garnish with fresh strawberries and serve immediately.
